One Pot Taco Pasta

Taco Tuesday will never be the same with this easy and cheesy one-pot taco pasta.

Ground beef, taco seasoning, tomatoes, and pasta! This super simple one-pot taco pasta will spice up your Taco Tuesdays and have your kids begging for seconds. 

I’m a sucker for anything that can be made in one dish. The fewer dishes I have to do on a weeknight, the better! Pasta is pretty much always an easy go-to staple dish in my house, but throw in some taco fair and we have an Italian take on a Mexican favorite. 

One-Pot Taco Pasta Recipe

Recreating this cheesy taco pasta dish is a breeze. You only need a few pantry staples. one pot and you are ready to serve up an easy weeknight meal that the whole family will love. 

Ingredients:

  • Ground Beef
  • 1 Packet Taco Seasoning
  • 1 Can Rotell
  • 1 Can Beef Broth
  • 1 Small Can Tomato Sauce
  • 1 Cup Milk
  • Velveeta Cheese – 1 of the “mini” blocks
  • 1 Can Diced Tomatoes
  • 1 Box Elbow Noodles

Start by browning your ground beef. While it is cooking, mix in your packet of taco seasoning. Once the beef is fully cooked, mix in all of the ingredients except your cheese and dry pasta. 

Over low/medium heat, bring the contents of your pot to a boil.  Once boiling, mix in pasta. Reduce heat and cover. 

Cook for 10-12 minutes, until the pasta is soft. You will want to remove the lid and stir every few minutes to make sure it doesn’t stick to the bottom of your pot.  When your pasta is done, mix in the cheese until it is nice and melted, then you are done! 

Serve immediately and top with green onions and sour cream!

Ingredients

  • 1 Lb Ground Beef
  • 1 Packet Taco Seasoning
  • 1 Cup Whole Milk
  • 8oz Can Tomato Sauce
  • 14.5 oz Can Beef Broth
  • 1 Can Rotel
  • 1 Can Diced Tomatoes
  • 1 Box Elbow Noodles
  • 1 Mini Block Velveeta Cheese

Instructions

  1. Brown the ground beef with the packet of taco seasoning

  2. When browned, mix in ALL ingredients EXCEPT the Cheese and Pasta.

  3. Bring to a boil over Medium/Low heat

  4. Mix in pasta when boiling. Reduce heat to low, cover, and cook for 10-12 minutes, until pasta is soft.

  5. Mix in Velveeta cheese and enjoy!
