Just because you decide to eat low cab, doesn’t mean you can’t enjoy some good old fashioned comfort foods. One of my favorite meals growing up was Shepherd’s Pie…. Yes, I know that when it is cooked with beef it is technically Cottage Pie… But I always knew it as Shepherd’s Pie so I am going with it! Anyways, this has always been of of my favorite comfort food meals but since I have been cutting carbs, I haven’t made it lately. The other day I was seriously craving some comfort though, and decided to try my hand at a Keto Shepherd’s Pie.
No lie, I was skeptical. I thought there was no way I would be able to take away all of the delicious carbs and substitute them with anything nearly as tasty…. but oh was I wrong! This low carb Keto shepherd’s pie turned out better than expected, and even the kids loved it!
Easy & Delicious Keto Shepherd’s Pie
Going Keto has been quite the journey. Full disclosure, I don’t stick to a super strict Keto diet all of the time… I have my “bad days” where I eat pasta or veg out on my favorite fried taco triangles… Even so though, I have changed the way I eat the majority of the time… Because of this, I have lost 20 Lbs in a little over 2 months! Obviously, something is working! I’m not perfect though.. I have my cravings and some days I just want some good hearty comfort food!
Keto Shepherd’s Pie Recipe with Cauliflower Topper
If you want to replicate this dish, you are going to need to head to the store! I get my groceries through either Instacart or Walmart Grocery Pickup... but you do you! This recipe is quite ingredient heavy, but I promise it is totally worth it! I will have a printable recipe list down below to make it easy for you as well!
To start making your shepherd’s pie, you will want to start by cooking your onions and some diced zucchini. Let those veggies start to soften… In the mean time, steam a head of cauliflower.
Mix in your ground beef with your veggies and cook through. When fully browned, mix in some crushed tomato ( about 1/3 of a large can), and about a tablespoon of Worcestershire. Let that simmer and start making your mashed cauliflower.
Mashed Cauliflower
Full disclosure, my mashed cauliflower did not turn out the best. It tasted delicious, but I made a mess and it was a bit chunkier than I would have liked.
Combine your soft cauliflower, some butter, cheese, a splash of heavy cream, and some sour cream. You will probably want to do this in a food processor! I do not have one, so I used my hand mixer and….. Well I ended up wearing some of the mashed cauliflower… The mixer is why mine wasn’t the super smooth consistency that I wanted… But if you don’t mind a little chunk, then it shouldn’t be an issue… Just mix in the heavy cream SLOWLY as to not wear it yourself.
Making the Keto Shepard’s Pie
Now that you have all of the parts ready, you can assemble them! Place your beef in a large oven safe pan… Top with your mashed cauliflower… Then top with some cheese and pop in the oven for about 20-30 minutes at 350°.
And there you have it! A delicious Keto friendly comfort food that will please even the pickiest eaters in your house!
