Fall is in full swing, and that crisp chill in the air is accompanied by friends and family gathering together on the weekends to enjoy a game of football. No matter if you are a football fan or not, if you live in the South you have probably been to a game day party. Even for people who don’t really care for the game though, always end up enjoying the camaraderie and the food. Yup, there is something special about football food.. From pigs in a blanket to hot wings, some dishes are just game day classics. I wanted to put a spin on one of my personal game day favorites by adding in some seafood and serving up some delicious blackened shrimp nachos.

Game Day Shrimp Nachos

Full disclosure, I am not the world’s biggest football fan. Even though it may not be my cup of tea, I really enjoy any excuse to host a party, so football parties tend to happen a few times every Fall at my house. While the game itself may not hold my interest, the food sure does! Creating fun dishes that everyone will enjoy really makes me happy. As a Florida girl, I try to get seafood into my meals as often as possible, so when Gorton’s Seafood reached out and wanted me to create a unique game day recipe I was thrilled.

Shrimp Nachos Step-by-Step

Using the Simply Bake Shrimp, this recipe is just so simple! First, start by making the shrimp according to the package directions. Once they are done, drain the majority of the scampi sauce off into a bowl. You can save it for later or toss it, up to you. Mix in seasoning of your choice to the shrimp and remaining scampi sauce ( Old Bay works amazing for this). Personally, I load it up, but feel free to use as little or much as you want depending on how you like your nachos.

You can let the shrimp sit to the side while you heat your oven up to 400° . While the oven is heating up, you can start layering your shrimp nachos. In a cast iron skillet ( or any oven save dish) layer tortilla chips, cheese, shrimp and toppings of your choice. I added in some fresh tomato, green onion, and dices jalapeno to mine.

First layer done… Now for the second layer… Add more cheese, chips, shrimp and toppings and finally top the whole dish with cheese… Really, you can’t ever have too much cheese when it comes to nachos!

Then just toss the whole thing in the oven for about 10 minutes. Once the cheese is nice and melted and starting to brown on top, your nachos are ready to come out and enjoy!

Serve your blackened shrimp nachos with a platter of toppings for everyone to choose from, and you are guaranteed to have the dish everyone is talking about for weeks on end.
