One Pot Cheesy Sausage and Rice

I love sausage, I love rice, so really this dish was a no-brainer! An instant win, this one-pot meal has become a family favorite and the tiny humans ask for it quite often. 

As busy as my life has been lately, one-pot meals have been my go-to! Quick, easy, and not a lot to think about, these are the family-friendly dinners I need in my life. And if you are reading this, they are probably your go-to dinners for your family as well. 

One-Pot Cheesy Sausage and Rice

Start off your sausage and rice with just a few base ingredients.

  • Kielbassa Sausage
  • Cooked Yellow Rice
  • Onion
  • Green Pepper
  • Milk
  • Mushrooms
  • Cream of Chicken Soup
  • Butter
  • Sour Cream

All in all, this recipe has some pretty basic ingredients. I don’t like to make anything too fancy or that needs too many ingredients.

Especially when I am trying to make a super quick family dinner. When it comes to cooking, especially for kids, sometimes less really is more. 

Easy Changes to the Sausage and Rice Recipe

I know when I am cooking from a recipe, I like to add things, leave things out, and make it my own. So, I thought you would like to do the same! Here are a few quick tweaks that you may, or may not, want to do.

Does it have to be yellow rice?

No, you don’t have to use yellow rice in this sausage and rice dish. If you prefer use cooked white rice or brown rice instead. I like the taste of yellow rice because of the seasoning that is already in it, but by all means, you do what you prefer. 

I don’t have the cream of chicken soup!

No problem, you can use any “cream of” soup in this recipe! Cream of mushroom, cream of celery, use whatever creamy soup your heart desires! All of them make the sausage and rice taste delicious!

Ew! I don’t like onions, pepper, or mushrooms!

No problem, just leave them out! Substitute any veggie of your choosing! This is really good with corn, green beans, or squash. Seriously, with the veggies, the sky is the limit! Or, if you are just not feeling it, leave the veggies out altogether!

Ingredients

  • 1 Cup Cooked Yellow Rice
  • 1 Package Kielbasa Sausage
  • 1/2 Diced Onion
  • 1 Diced Green Pepper
  • 8 Oz Mushrooms
  • 1 Can Cream of Chicken Soup
  • 1 Tbsp Butter
  • 1/2 Cup Shredded Cheese
  • 1/4 Cup Sour Cream
  • 1/4 Cup Milk

Instructions

  1. If you don't have any leftover rice, start by cooking your yellow ( or brown or white) rice. This recipe is perfect for using leftover rice though!

  2. Heat a large pan on medium-high heat. Melt your butter and toss in sliced kielbasa sausages.

  3. Cook until the sausages are starting to brown on both sides.

  4. Toss in your onion, peppers, and mushrooms. Cook until soft.

  5. Reduce heat to low.

  6. Mix in the rice, a can of cream of chicken soup, milk, and sour cream. Combine well.

  7. Mix in your shredded cheese, stirring until melted and well combined.

  8. Serve and enjoy!
