In the past month, my Keto journey has been pretty great. Of course there are times where I still crave carbs and sugar, but as the days pass the cravings subside. The one thing I miss the most though… Tacos! I am a sucker for Mexican food in general, and used to live for Taco Tuesday. So one night, in my quest to fulfill my deepest taco craving, I created this Keto Taco Skillet in the hopes that it would be just as delicious as it sounded in my mind. My mind did not let me down either. It was super simple, low carb, and completely fulfilled my urge to gorge myself on tacos without breaking my daily carb intake. Low Carb Keto Approved Taco Skillet
Tacos are the food that makes my soul sing. They are delicious, easy to make, and inexpensive. It literally may have hurt my soul to realize I can’t partake in my favorite weekly meal now that I am doing the Keto diet. Fortunately, with some foresight and creativity, this Keto taco skillet came into existence. It has everything I love about traditional tacos without the carbs that make me bloat up like a beached whale.
A wonderful bonus is that my two kids and my husband loved this recipe as well! I was doubtful that they would accept it with as much love as I had. The main reason I was nervous is due to the cauliflower rice. It isn’t something we have really eaten before, and I wan’t sure how the flavor would translate and change within the meal. Honestly, I was a bit convinced that the flavor of the cauliflower would overpower the dish and give it an odd aftertaste and texture… Thankfully I was wrong! Once it is cooked into the dish, you can’t even tell that there is any cauliflower in there at all.
Another beautiful thing about the Keto taco skillet is that you can easily customize it to your personal tastes. I love onions, green peppers and fresh tomatoes… but you can add in or leave out any veggie that you want. I was thinking next time I will try it with mushrooms as well. Of course you can then top it with fresh avocado and sour cream, really bringing this dish together.

Keto Taco Skillet
Keto Taco Skillet
Ingredients
- 1 Lb Ground Beef
- 1/2 Onion
- 1 Bell Pepper
- 1-2 Fresh Tomatoes
- 1 Package Cauliflower Rice
- 1 Cup Cheese
- Taco Seasoning
- Avocado
- Sour Cream
- Cilantro
- 1 Tbsp Minced Garlic
Instructions

Dice your onion and pepper.

Brown your ground beef. When it is partially browned, add in the taco seasoning, diced onion and pepper.

When the meat is cooked and the veggies have started to soften, mix in your minced garlic and the cauliflower rice ( mine was stiff partially frozen). Let cook about 10 minutes.

Mix in diced tomatoes and let simmer another 5 minutes.

When everything is combined and the rice is cooked through, top with cheese and cover with a lid to melt for 2-3 minutes

Top with cilantro, sour cream, and avocado and enjoy!
