Easy Mexican Street Corn Casserole

Ready to add a little something extra to your taco Tuesday? This Mexican street corn casserole is the perfect way to make your normal taco dinner a lot more exciting!

I love Elotes, but I don’t love making them myself. So, I wanted to take some inspiration and make a simple casserole that would quell my craving and give me something exciting to eat for dinner!

How to Make Mexican Street Corn Casserole

As with any recipe, you need to start out with your ingredients. Head to the store or place an online order for the following ingredients.

  • large bag of frozen corn
  • 1 large red pepper
  • Tajin seasoning
  • CIlantro
  • Mayo
  • Cotija Cheese
  • Sour Cream

Once you have your ingredients, you are ready to make your dish!

As I said, this is super simple. Start out by preheating your oven to 425°. 

While it is preheating, combine all of your ingredients in a large mixing bowl. 

You can use the corn while it is still frozen ( i did), and then add in a diced red onion, 1/4 cup of sour cream, 1/4 cup of mayo, a generous amount of Tajin, and cilantro, and a handful of cotija cheese.

As you see, my measurements are super precise, I know. I really believe when cooking, you just need a baseline and then you just add according to how you are feeling at the moment. Cooking is something personal and everyone liked different levels of seasoning and spices. 

As for me, I like a lot of spice and seasoning!  Also, always remember to start small. “You can always add more but you can’t ever take any out”.

Then all you need to do is add your mix into a large baking dish. Pop it in the oven for 45 minutes and you are good to go!

Ingredients

  • 1 Bag Corn
  • 1 Red Pepper
  • 1/4 Cup Mayo
  • 1/4 Cup Sour Cream
  • Cotija Cheese
  • Tajin seasoning
  • CIlantro

Instructions

  1. Preheat the oven to 425°.

  2. Dice your red pepper.

  3. Combine everything in a large mixing bowl.

  4. Pour into a large baking pan and cook for 45 minutes.
