These vegetarian fajitas are loaded with veggies, chickpeas, and fajita seasoning and are perfectly served on a warm pita bread shell.
Preheat oven to 425°.
Cut up your Veggies and drain the chickpeas.
Place all the veggies and chickpeas on your sheet pan.
Drizzle with olive oil and season with cilantro and fajita seasoning.
Cook for 20 minutes.
Warm up your pita bread, or taco shells. Top with your preferred toppings and enjoy!
