Pulled Pork Stuffed Peppers. Low Carb Keto friendly stuffed peppers using leftover pulled pork for an easy and delicious weeknight dinner.

Ingredients
  • 3 Green Peppers
  • 1 Cup Cheese
  • Leftover Pulled Pork
  • Sour Cream
  • Diced Green Onions
  • Salt & Pepper to taste
  • Paprika optional
Instructions
  1. Preheat your oven to 350°

  2. Cut green peppers in half and boil for about 5 minutes until they start to soften. 

  3. Place the peppers in a oven safe dish ( I prefer cast iron). Season with salt, pepper, and paprika. 

  4. Fill your peppers with the leftover pulled pork.

  5. Top with shredded cheese and bake for 10-15 minutes until peppers are cooked through and cheese is nice and melted. 

  6. When done, top with green onions and sour cream and enjoy!
