Pulled Pork Stuffed Peppers. Low Carb Keto friendly stuffed peppers using leftover pulled pork for an easy and delicious weeknight dinner.
Preheat your oven to 350°
Cut green peppers in half and boil for about 5 minutes until they start to soften.
Place the peppers in a oven safe dish ( I prefer cast iron). Season with salt, pepper, and paprika.
Fill your peppers with the leftover pulled pork.
Top with shredded cheese and bake for 10-15 minutes until peppers are cooked through and cheese is nice and melted.
When done, top with green onions and sour cream and enjoy!
