Make-ahead French Toast Muffin Cups that you store in the refrigerator and heat up in the mornings for a quick and easy breakfast option.

Ingredients
  • 1 loaf Brioche Bread Vanilla if you can find it
  • 6 Eggs
  • 1 tbsp Cinnamon
  • 2 tbsp Vanilla Extract
  • 1/2 cup Rise Brewing Co Oat Milk or any dairy or dairy-free milk you choose
  • 2 tbsp Brown Sugar
  • 2 tbsp White Sugar
  • Maple Syrup Optional
  • Fruit or Chocolate Optional
Instructions
  1. Preheat your oven to 400°.

  2. Combine the Eggs, Milk, and Vanilla Extract in a large mixing bowl.

  3. Mix in the Cinnamon, Sugar, and half of the Brown Sugar to the bowl and combine well.

  4. Break your brioche bread up into small chunks and mix into the batter.

  5. Fill a muffin tin 2/3 of the way with the French Toast mix.

  6. Top with the rest of the Brown Sugar, Maple Syrup, and optional fruit and/or chocolate.

  7. Bake for 20 -25 Minutes.

  8. Let cool and eat right away, or freeze individually and reheat as desired.
