One of my absolute favorite desserts has always been cheesecake. I’ve never been a real traditional cake person, but give me cheesecake and I am one happy lady! 

Making traditional cheesecake though is insanely time-consuming. While I love it, I just don’t have time to bake a from-scratch cheesecake on a regular basis. 

Instead, I have been making these super simple no-bake cheesecake cups. They are so easy to make and you can add in any fruit or chocolate you want to them. 

They are just sweet enough without being too rich. Making them in these little individual cups is great for sharing with the kids.

How to Make No-Bake Strawberry Cheesecake Cups

To recreate this super easy recipe, you first need to gather your ingredients.

  • Cream Cheese
  • Greek Yogurt
  • Vanilla Extract
  • Honey
  • Lemon Juice
  • Butter
  • Graham Cracker Crumbs
  • Strawberries (optional)

To start, make the crust! I personally took the easy road and used a box of pre-crushed graham crackers. Feel free to crush your own though! 

Melt 1-2 Tbsp of butter and pour it into a small bowl with a good helping of the crushed graham crackers to make the crust. Then put a nice layer in your mini cups. Add more butter/crackers as needed to get the consistency you prefer. 

Now we will make the filling! Start with 1 8oz package of softened cream cheese. Mix in about 2 Tbsp of plain greek yogurt, 1 Tbsp of vanilla extract, a splash of lemon juice, and about 1 Tbsp honey. 

Combine well with a hand mixer or other electric mixer.  Then you are pretty much done. Scoop a heaping helping into your little bowl on top of your crust and put your little cups into the fridge for about 20 minutes. 

When your no-bake cheesecake cups are firm and cold, take them out and top them with fresh strawberries and a sprinkling of graham cracker crumbs.

Ingredients

  • 8 oz cream cheese
  • 1 Tbsp honey
  • 2 Tbsp greek yogurt
  • 1 Tbsp vanilla extract
  • 1 splash lemon juice
  • 1-2 Tbsp melted butter
  • 1 cup graham cracker crumbs
  • fresh strawberries

Instructions

  1. Combine melted butter and graham crackers to make a crust in the little cups.

  2. Combine the cream cheese, greek yogurt, vanilla extract, lemon juice, and honey.

  3. Place the cheesecake mixture into the tiny cups and then let them chill in the fridge for about 20 minutes.

  4. Top with fresh strawberries and a sprinkle of graham crackers and enjoy!
