Espresso Cheesecake Brownies

Ever since Christmas, my daughter has been obsessed with baking. She got this adorable bakers set that she loves to wear with a hat and apron. So since she is always wanting to bake, I decided it would be fun to try out a new recipe. We decided to try our hands at espresso cheesecake brownies, and I am glad we did!

Espresso Cheesecake Brownies

I have always had a love for baking. Now my four-year-old daughter has gotten the baking bug. It is something we can love and enjoy together, giving us that mother-daughter bonding time. This time is extremely important to both her and me, especially since she is no longer an only child. We love finding things to do together that are just for us, and baking has been the biggest one.

On this day we decided brownies were needed! It was a rainy Florida day, so why not cheer up with brownies? We wanted to go big though, so why just regular brownies when we would make Espresso cheesecake brownies? I rummaged through the pantry, got everything out and we set out to create our masterpiece!

Willow ended up having a blast making these brownies. She insisted on wearing her baker outfit, which is just so adorable!

To make these espresso cheesecake brownies, you want to start with the brownie portion.  You are going to want to mix together one box of chocolate cake mix, one egg, 3/4 cup of vegetable oil, two tablespoons of coffee (or water if you don’t want to use coffee), and half of a bag of chocolate chips. Mix until this is smooth and spread it out into a greased pan. I used a medium-sized glass Pyrex and it was a perfect size.

Once you have your brownies, you can start on the cheesecake topping. You will take 8 Oz of softened cream cheese, one egg, a half teaspoon of vanilla, and a quarter cup of sugar and beat them together. An electric hand-mixer or mixing bowl work best for this step.

Once it is all mixed together, you are going to want to spread it on top of the brownie mix. Spread it out with a knife in a way that allows it to get down into the brownies.

Finally, you want to cover the top with the rest of your chocolate chips and bake at 350 for about 40 minutes.

They will come out super hot and gooey, so you will want to allow them some time to cool off before digging in!

Espresso Cheesecake Brownies

Ingredients

  • 1 Box Chocolate Cake Mix
  • 3/4 Cup Vegetable Oil
  • 2 TBSP Coffee
  • 2 Eggs
  • 1 Bag Chocolate Chips
  • 8 Oz Cream Cheese ( Softened)
  • 1/4 Cup Sugar
  • 1/2 Tsp Vanilla

Instructions

  1. Preheat oven to 350.

  2. Mix together the cake mix, oil, coffee, 1 egg, and half of the chocolate chips. 

  3. Spread into greased baking pan.

  4. Beat together cream cheese, sugar, 1 egg, and vanilla.

  5. Spread onto the top of the brownie batter. Cutting through for a marbled effect.

  6. Spread the remaining chocolate chips on top.

  7. Bake for 40 minutes
